Due to the number of queries I get about this, I've made this sticky topic to explain the situation.
Unfortunately creating an iSync Plugin for the M600, P990 or W950 is impossible at the moment because an iSync update from Apple will be required to add support for these phones implementation of SyncML.
These phones all use Symbian OS v9.1 and UIQ v3.0, whereas previous Symbian Sony Ericsson phones such as the older P910 use Symbian OS v7.0 and UIQ v2.1 therefore the sync agents will need to be updated for the new OS.
This is well beyond the scope of a simple PhonePlugin, which can only add support for phones very similar to ones already supported natively by Apple.
It was assumed that Apple would add support in the recent Mac OS X 10.4.7 update which included iSync 2.3, however, this was not the case. It is therefore likely that we will have to wait for the next Mac OS X update for support, unless Apple decides to release a standalone iSync update.
When this may be is anyone's guess, but keep an eye on the rumour sites, if you want to get an early hint!
In the meantime, you can export your contacts as vCards from Address Book (just drag them to the desktop), and then send them to the phone via Bluetooth.
Not owning these phones myself, I'm not so sure about calendar entries, however, it may also be possible to export data as vCal cards from iCal and send them to the phone via Bluetooth.
UPDATE: A posting by 'petvas' on the Apple Discussions forum here, gives the following syncing possibility for the M600:
"I also own the M600i, a fantastic mobile. I got past the sync problems by syncing against an exchange server and using Entourage on my Macs! As far as file copying concerns, you can use the Bluetooth functionality!
You can get an Exchange Account from many providers, I personally use www.4smartphone.net and I am very happy with it.
To sync against Exchange Server, you first need to download the Exchange Active Sync software for the M600i, available for free on the Sony Ericsson web site."
There is more information provided in the thread, but as I don't personally own the phone, I can't offer any further help.
